25-Minute Sweet Chili Turkey & Green Bean Bowls

Takeout sweet chili bowls always look better than they taste — lukewarm rice, a sad drizzle of sauce from a plastic packet. This version fixes everything in one skillet. The green beans get blistered hard and fast until they’re charred in spots, the ground turkey browns up and soaks in a glossy sweet chili glaze made from a real bottle plus soy, rice vinegar, garlic, and ginger, and everything piles onto hot jasmine rice with green onions and sesame.

Why you’ll love it

  • One skillet, plus a pot of rice. While the rice simmers, the entire turkey and bean situation happens in one pan.
  • Sticky-sweet takeout flavor. The glaze reduces right in the skillet and clings to every crumble of turkey.
  • ~32g protein per serving (estimated), from lean ground turkey piled high.
  • Faster than delivery. 25 minutes, start to bowls on the table.

  • 1 tbsp neutral oil, divided
  • 12 oz fresh green beans, trimmed

  • 1/3 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce

Equipment

A medium saucepan with lid (for rice), a large skillet (12-inch), and a wooden spoon or spatula.

Instructions

  1. Start the rice (2 minutes hands-on). Rinse the rice in a fine-mesh strainer. Combine with 2 1/4 cups water and 1/4 teaspoon salt in a medium saucepan; bring to a boil, reduce to a simmer, cover, and cook 12–14 minutes until tender and the water is absorbed. Let stand, covered, 5 minutes, then fluff. (If using pre-cooked rice pouches, heat them per package directions while the turkey cooks.)
  2. Blister the green beans (6 minutes). Heat 1/2 tablespoon of the oil in a large skillet over high heat until shimmering. Add the green beans in a single layer, season with 1/4 teaspoon salt, and cook undisturbed 2–3 minutes until charred in spots. Toss and cook 3–4 minutes more until crisp-tender. Transfer to a plate.
  3. Brown the turkey (7 minutes). Return the skillet to medium-high heat with the remaining 1/2 tablespoon oil. Add the ground turkey and cook, breaking it into crumbles, until browned and cooked through, about 6–7 minutes. Stir in the white parts of the green onions and the remaining 1/4 teaspoon salt.
  4. Build the glaze (2 minutes). Push the turkey to the edges of the skillet. Add the garlic and ginger to the center and cook 30 seconds until fragrant. Stir in the sweet chili sauce, soy sauce, rice vinegar, sesame oil, and red pepper flakes if using. Simmer 1–2 minutes, stirring, until the sauce is glossy and coats the turkey.
  5. Bring it together (1 minute). Return the green beans to the skillet and toss to coat in the glaze. Cook 1 minute more so the beans pick up the sauce.
  6. Build the bowls (2 minutes). Spoon rice into four bowls. Pile on the glazed turkey and green beans, drizzle with any extra sauce from the pan, and shower with the green onion tops and sesame seeds.

Doneness cues: Ground turkey must reach 165°F internally (use an instant-read thermometer — it will hit temp well before the browning finishes). The beans are right when they’re charred in spots but still snappy. The glaze is done when it looks thick and glossy enough to cling to the turkey instead of pooling.

Notes

Food safety: ground turkey must reach 165°F internally. Rice cooks in parallel — pre-cooked rice pouches make this even faster. Leftovers 4 days refrigerated / 3 months frozen (store rice separately). Protein ~32g/serving estimated from USDA FoodData Central; not lab-tested.

Nutrition note

Protein is estimated at about 32g per serving, calculated from USDA FoodData Central values for the listed ingredients — this is an estimate, not a lab analysis. Actual values vary by brand and preparation.

Substitutions and tips

  • Ground chicken swaps in 1:1. Ground pork works too — brown it well and drain any extra fat.
  • No fresh green beans? Use 12 oz frozen green beans, thawed and patted very dry, and add 2 extra minutes of blistering time.
  • Make it spicier: double the red pepper flakes or add a drizzle of sriracha at the table.
  • Brown rice or cauliflower rice work under the bowls — cook them in parallel and keep the skillet timing the same.
  • Don’t crowd the beans in step 2 — work in two batches if needed. Crowded beans steam instead of blistering, and you lose the char.

Storage and reheating

Refrigerate leftovers within 2 hours in an airtight container for up to 4 days; store the rice separately so it reheats evenly. Reheat in a skillet over medium heat with a splash of water, or microwave in 60-second bursts, stirring between, until steaming (165°F). Freezes well for up to 3 months — thaw overnight in the fridge. The green beans lose some snap after freezing but the flavor holds.

Frequently asked questions

Is sweet chili sauce spicy? Barely — it’s sweet first with a mild background warmth. The optional red pepper flakes are where the real heat comes from, so add them to taste.

Can I use bottled teriyaki instead? You can, but the bowl loses the signature sweet-heat balance. If you do, skip the soy sauce (teriyaki is saltier) and add a squeeze of lime to brighten it.

Is this good for meal prep? Very — portion the rice and the turkey-bean mixture into separate containers. Reheat together and add fresh green onions and sesame when serving.

How do I keep the beans from going soggy? Blister them first and pull them from the pan before the turkey goes in. They only return for the final toss, so they stay crisp.
