- Soften the peppers and onion. Stir in the onion and chopped bell peppers; cook until softened and lightly charred at the edges, about 4–5 minutes. Add the garlic, Italian seasoning, smoked paprika, salt, and pepper; cook 1 minute more, until fragrant.
- Add tomatoes, broth, and rice. Pour in the diced tomatoes with their juices, the tomato sauce, and the chicken broth, scraping up any browned bits. Stir in the instant rice. Bring to a lively simmer.
- Simmer covered. Reduce the heat to medium-low, cover, and cook until the rice is tender and most of the liquid is absorbed, about 7 minutes. Stir once halfway through.
