- Bring a large pot of salted water to a rolling boil. Cook the wheat noodles according to package directions until just tender. Before draining, scoop out 1 cup of the starchy noodle water. In the last 2 minutes of cooking, add the halved bok choy to the pot to blanch. Drain noodles and bok choy together.
- While the water heats, warm the neutral oil in the large skillet over medium-high heat. Add the ground turkey and cook, breaking it into small crumbles, until no pink remains, about 5–6 minutes.
- Stir 1 tablespoon of the soy sauce, 1 tablespoon of the chili crisp, the garlic, and the ginger into the turkey. Cook 1 minute more, until fragrant. Remove from the heat.
- In the small bowl, whisk the tahini, remaining 2 tablespoons soy sauce, remaining 1 tablespoon chili crisp, rice vinegar, honey, and sesame oil. Whisk in hot noodle water a few tablespoons at a time until the sauce is smooth and pourable.
- Add the drained noodles to the skillet with the turkey. Pour over the sauce and toss until every noodle is glossy and coated, loosening with splashes of noodle water as needed.
- Divide among bowls. Top each with blanched bok choy, crushed peanuts, sesame seeds, and an extra spoonful of chili crisp.
Notes
Food safety: ground turkey must reach 165°F internally — the full 5–6 minute brown plus the hot toss guarantees it. Tahini stands in for Chinese sesame paste — stir it very well and thin with hot noodle water until pourable. Leftovers 3 days refrigerated; revive with a splash of hot water. Not freezer-friendly.
