20-Minute Korean Beef Bowls

Sweet-savory ground beef glazed glossy in soy, brown sugar, garlic, and ginger, piled over rice with scallions, sesame, and cucumber — 20 minutes, about 32g protein per serving (estimated).

Ingredients
  

  • 1 1/2 cups instant white rice uncooked
  • 1 1/2 cups water
  • 1 tbsp vegetable oil
  • 1 1/4 lb ground beef 90% lean
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup packed brown sugar
  • 4 cloves garlic minced
  • 1 tbsp grated fresh ginger see note
  • 1 tbsp rice vinegar
  • 1/2 tsp crushed red pepper flakes optional
  • 2 tsp toasted sesame oil
  • 4 green onions thinly sliced, divided
  • 2 tbsp sesame seeds toasted
  • 1 English cucumber thinly sliced
  • Kimchi for serving (optional)

Equipment

  • Large skillet (12-inch)
  • Wooden spoon or spatula
  • Medium saucepan with lid (for the rice)

Method
 

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into crumbles, until no pink remains and the edges are deeply browned, about 5–6 minutes. Drain off any excess fat.
  2. While the beef browns, whisk together the soy sauce, brown sugar, garlic, ginger, rice vinegar, and red pepper flakes (if using) in a small bowl until the sugar dissolves.
  3. Bring the water to a boil in a medium saucepan. Stir in the instant rice, cover, and remove from the heat. Let stand 5 minutes, then fluff with a fork. Instant rice is what keeps this dinner at 20 minutes — regular long-grain rice needs 15+ minutes of active simmering.
  4. Pour the glaze over the browned beef. Simmer, stirring, 2–3 minutes, until the sauce thickens and coats every crumble with a glossy sheen.
  5. Remove the skillet from the heat and stir in the sesame oil and half of the green onions. The off-heat sesame oil keeps its toasty flavor instead of cooking away.
  6. Fluff the rice and divide among four bowls. Spoon the glazed beef over the rice, then top with cucumber slices, the remaining green onions, and sesame seeds. Add kimchi on the side if you like.

Notes

Food safety: ground beef must reach 160°F internally — check with an instant-read thermometer. Instant rice keeps this at 20 minutes; long-grain rice needs ~30 total.
