- In a small bowl, whisk the soy sauce, honey, rice vinegar, cornstarch, and red pepper flakes (if using) until the cornstarch dissolves. Set aside. Dice the water chestnuts, slice the scallions (keep whites and greens separate), and separate, wash, and thoroughly dry the lettuce leaves.
- Heat the neutral oil in a large skillet over medium-high heat until shimmering. Add the ground turkey and cook, breaking it into small crumbles, until browned and no pink remains, about 5–6 minutes. Drain off any excess liquid if needed.
- Push the turkey to the edges of the skillet and add the grated ginger, garlic, and scallion whites to the center. Cook, stirring, 1–2 minutes until fragrant — don't let the garlic brown.
- Pour in the sauce and add the diced water chestnuts. Stir to coat everything and simmer 2–3 minutes, until the sauce thickens into a glossy glaze that clings to the turkey. The turkey is done when it reaches 165°F and the sauce looks shiny, not watery.
- Drizzle the 1 tablespoon of toasted sesame oil over the filling and toss. Arrange the lettuce cups on a platter and spoon about 1/3 cup of the warm turkey filling into each cup.
- Shower the cups with scallion greens and toasted sesame seeds. Serve immediately with lime wedges and sriracha on the side for squeezing and drizzling.
Notes
Food safety: ground turkey must reach 165°F internal — check the thickest crumbles with an instant-read thermometer. Dry lettuce leaves completely so the cups hold.
