- Pat the chicken pieces dry and season with 1 teaspoon salt and the pepper. Heat the olive oil in a large Dutch oven over medium-high heat. Add the chicken in a single layer and sear 4–5 minutes, turning once, until golden on the outside — it will not be cooked through. Transfer to a plate.
- Reduce the heat to medium and melt the butter in the same pot. Add the onion, carrots, and celery with the remaining 1/2 teaspoon salt. Cook 5 minutes, stirring occasionally, until softened. Stir in the garlic and thyme; cook 1 minute more, until fragrant.
- Pour in the chicken broth, scraping up the browned bits from the bottom of the pot. Stir in the instant rice and add the bay leaf. Bring to a lively boil.
- Return the chicken (and any accumulated juices) to the pot. Reduce the heat to a gentle simmer, cover, and cook 8 minutes, until the rice is tender and the chicken pieces reach 165°F internally.
- Remove the pot from the heat. Fish out and discard the bay leaf. Stir in the lemon juice and taste; add more salt and pepper as needed.
- Stir in the fresh parsley and ladle into bowls. Serve with crusty bread for dunking.
