30-Minute Smoky Black Bean Soup

Smoky, thick, and creamy without cream: canned black beans, chipotle in adobo, and fire-roasted tomatoes, partially mashed right in the pot — one pot, 30 minutes, about 17g protein per serving (estimated). Honestly vegetarian.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large yellow onion diced
  • 1 red bell pepper diced
  • 4 cloves garlic minced
  • 2–3 chipotle peppers in adobo minced, plus 1 tablespoon adobo sauce
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt plus more to taste
  • 1/2 teaspoon black pepper
  • 3 (15 oz) cans black beans drained and rinsed
  • 1 (14.5 oz) can fire-roasted diced tomatoes undrained
  • 4 cups low-sodium vegetable broth
  • 1 bay leaf
  • 2 tablespoons fresh lime juice plus lime wedges for serving
  • 1/4 cup chopped fresh cilantro plus more for serving
  • Plain Greek yogurt, diced avocado, crumbled cotija, and tortilla chips for serving

  • Potato masher (or the back of a large spoon)

Method
 

  1. Heat the olive oil in a large Dutch oven or heavy soup pot over medium-high heat. Add the onion and bell pepper; cook, stirring occasionally, until softened and just starting to color, about 5 minutes.
  2. Add the garlic, chipotle peppers, adobo sauce, cumin, smoked paprika, salt, and black pepper. Cook, stirring constantly, until deeply fragrant, about 2 minutes. This wakes up the spices and tames the raw bite of the chipotle.
  3. Pour in the black beans, fire-roasted tomatoes with their juices, vegetable broth, and the bay leaf. Stir well, scraping up the browned bits from the bottom of the pot. Bring to a lively boil.
  4. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, until the beans are very tender and the flavors have come together, about 15 minutes. Fish out and discard the bay leaf.
  5. Use a potato masher to mash roughly one-third of the beans right in the pot — about 15 firm presses. Stir the mashed beans back in; the soup should thicken noticeably while keeping plenty of whole-bean texture. No roux, no blender, no extra step.
  6. Stir in the lime juice and cilantro. Taste and add more salt if needed — beans are thirsty for salt. Ladle into bowls and serve with Greek yogurt, avocado, cotija, tortilla chips, and extra lime wedges.

Notes

Food safety: Vegetarian — no internal temperature target. Canned beans are the 30-minute enabler — no soaking. Partial in-pot mash thickens the soup with no roux.
