30-Minute Turkey & Butternut Chili

Ingredients
  

  • 1 1/2 lb ground turkey 93% lean
  • 1 tablespoon olive oil
  • 1 medium yellow onion diced
  • 4 cups pre-cubed butternut squash about 20 oz
  • 3 cloves garlic minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt plus more to taste
  • 1/2 teaspoon black pepper
  • 1 (14.5 oz) can fire-roasted diced tomatoes undrained
  • 1 (15 oz) can black beans drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1 teaspoon brown sugar optional, balances the tomatoes' acidity
  • For serving: shredded sharp cheddar, sour cream, chopped fresh cilantro, lime wedges

Equipment

  • Large Dutch oven or heavy-bottomed pot with lid

  • Potato masher (or the back of a large spoon)

Method
 

  1. Heat the olive oil in a large Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it into crumbles, until no pink remains, about 5–6 minutes. Drain off any excess liquid.
  2. Stir in the onion and butternut squash; cook until the onion softens, about 3 minutes. Add the garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper; cook 1 minute more, until fragrant.
  3. Pour in the fire-roasted tomatoes with their juices, the black beans, and the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a lively simmer.
  4. Reduce the heat to medium-low, partially cover, and simmer until the squash is fork-tender, about 8 minutes. Cut any oversized squash cubes in half before cooking so everything softens at the same pace.
  5. Mash a few spoonfuls of squash directly in the pot with a potato masher or the back of a spoon — this is what thickens the chili without flour or cornstarch. Stir in the brown sugar if using, and adjust salt and pepper.
  6. Ladle into bowls and finish with shredded cheddar, a dollop of sour cream, cilantro, and a squeeze of lime.

Notes

Food safety: Ground turkey to 165°F. Pre-cubed butternut squash keeps this at 30 minutes; cubing a whole squash adds ~10 minutes. Mash some squash to thicken — no flour needed. Leftovers 4 days refrigerated / 3 months frozen. Protein ~30g/serving estimated from USDA FoodData Central; not lab-tested.
