Caprese salad has the right idea — ripe tomatoes, creamy mozzarella, fresh basil — but it was never going to pass as dinner. This caprese chicken skillet fixes that. Seasoned chicken breasts get a hard sear in one skillet, cherry tomatoes blister right alongside them, and slices of fresh mozzarella melt over the top under the lid. A shower of basil and a drizzle of balsamic glaze finish it, and 30 minutes later dinner tastes like an Italian summer.

Why you’ll love it
- One skillet, restaurant looks. The whole thing cooks in a single pan — sear, blister, melt, serve.
- Caprese flavors, dinner portions. Tomatoes, mozzarella, and basil over juicy chicken instead of a side salad.
- ~48g protein per serving (estimated), from chicken breasts plus fresh mozzarella.
- Naturally gluten-free. No breading, no flour — just chicken, tomatoes, cheese, and herbs.

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts, 4 small breasts, pounded to an even 3/4-inch thickness
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tsp Italian seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved, about 10 oz
- 1/4 tsp red pepper flakes, optional
- 8 oz fresh mozzarella, sliced into 1/4-inch rounds
- 1/4 cup torn fresh basil leaves, plus more for serving
- 2 tbsp balsamic glaze, plus more for drizzling
Make your own balsamic glaze: simmer 1/2 cup balsamic vinegar in a small saucepan over medium-low heat until syrupy and reduced by half, 8–10 minutes. It keeps for weeks in the fridge.

Equipment
A large oven-safe skillet with a lid (12-inch), a meat mallet or rolling pin, and an instant-read thermometer.
Instructions
- Season the chicken. Pound the chicken breasts to an even 3/4-inch thickness between sheets of plastic wrap or in a zip-top bag. Pat dry with paper towels, then season both sides with the salt, pepper, and Italian seasoning.
- Sear the chicken. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and sear undisturbed for 5–6 minutes per side, until deeply golden. Transfer to a plate (it will finish cooking in step 4).
- Blister the tomatoes. Reduce the heat to medium. Add the garlic to the skillet and cook 30 seconds, until fragrant. Add the halved cherry tomatoes and red pepper flakes (if using); cook, stirring occasionally, until the tomatoes soften and blister in spots, about 3–4 minutes.
- Melt the mozzarella. Return the chicken to the skillet, nestling it among the tomatoes. Lay the mozzarella slices over each breast, cover with the lid, and cook 3–4 minutes, until the cheese is melted and the chicken reaches 165°F internally.
- Rest. Remove the skillet from the heat and let it stand, covered, for 2 minutes so the juices redistribute.
- Finish and serve. Scatter the torn basil over the top and drizzle with the balsamic glaze. Serve straight from the skillet with crusty bread, over pasta, or alongside a simple green salad.

Doneness cues: Chicken is done at 165°F on an instant-read thermometer inserted into the thickest part. The mozzarella is ready when fully melted and just starting to slump over the edges of the chicken. Tomatoes are done when softened with charred blistered spots.

Nutrition note
Protein is estimated at about 48g per serving, calculated from USDA FoodData Central values for the listed ingredients — this is an estimate, not a lab analysis. Actual values vary by brand and preparation.
Substitutions and tips
- Don’t skip pounding the chicken. Even 3/4-inch thickness is what lets the breasts cook through in the sear time without drying out the thin ends.
- No fresh mozzarella? Low-moisture mozzarella slices melt fine, though you lose some creaminess. Shredded mozzarella works in a pinch — pile it on rather than slicing.
- Dairy-free: skip the mozzarella and finish with extra tomatoes, basil, and a spoonful of dairy-free pesto.
- Chicken thighs work too: use 1 1/2 lb boneless, skinless thighs; sear 5 minutes per side and check for 165°F — they stay juicy even if they go a little past.
- Watery mozzarella? Pat the slices dry with paper towels before adding them, and don’t cover longer than 4 minutes — the cheese melts quickly.

Storage and reheating
Refrigerate leftovers within 2 hours in an airtight container for up to 3 days. Reheat gently in a covered skillet over medium-low heat with a splash of water, or microwave in 60-second bursts, until steaming (165°F). Freezing is not recommended — fresh mozzarella turns rubbery and basil blackens when thawed.

Frequently asked questions
Can I use chicken cutlets instead of full breasts? Yes — thin cutlets are ideal here since they cook even faster. Sear 3–4 minutes per side and check for 165°F; reduce the covered melting time to 2–3 minutes.
My mozzarella released a lot of water. What happened? Fresh mozzarella holds whey. Pat the slices dry with paper towels before adding them, and don’t cover longer than 4 minutes — the cheese melts quickly.
Can I make this ahead? It is best served fresh from the skillet while the cheese is molten. You can season the chicken and halve the tomatoes up to a day ahead, refrigerated separately, then cook fresh in 25 minutes.
What should I serve with caprese chicken? Crusty bread for the tomatoey pan juices, pasta, orzo, or a simple arugula salad. For low-carb, serve over zucchini noodles or cauliflower rice.
Is balsamic glaze the same as balsamic vinegar? No — glaze is vinegar reduced with a sweetener into a thick syrup. Straight vinegar is too sharp and thin here; if you only have vinegar, reduce it as described in the tips above.
