Add the chicken in a single layer (work in two batches if crowded) and sear 3–4 minutes per side, until deeply golden. Check the thickest piece with an instant-read thermometer — it should read 165°F. Transfer to a plate.
- Sauté the aromatics. Reduce the heat to medium. Add the remaining tablespoon of oil, then the garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook about 1 minute, stirring, until fragrant — don’t let the garlic brown.
