- Pat the chicken pieces dry. Toss with 1/2 teaspoon of the salt, the black pepper, and the garlic powder.
- Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat until shimmering. Add the chicken in a single layer (work in two batches if crowded) and sear 3–4 minutes per side, until deeply golden. Check the thickest piece with an instant-read thermometer — it should read 165°F. Transfer to a plate.
- Reduce the heat to medium. Add the remaining tablespoon of oil, then the garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook about 1 minute, stirring, until fragrant — don't let the garlic brown.
- Pour in the chicken broth, scraping up all the browned bits from the bottom of the pan. Stir in the heavy cream and bring to a gentle simmer. Reduce the heat to low and sprinkle in the Parmesan a handful at a time, stirring until melted and the sauce thickens slightly, about 2 minutes. Season with the remaining 1/2 teaspoon salt, or to taste.
- Add the spinach by the handful, stirring until wilted, about 1–2 minutes. Return the chicken and any accumulated juices to the skillet. Simmer 2 minutes, until everything is heated through and the sauce coats the chicken.
- Shower with the basil and extra Parmesan. Serve over pasta, rice, or mashed cauliflower — or with crusty bread for mopping up the sauce.
