Equipment

A large deep skillet with lid (12-inch), and a wooden spoon or spatula.

Instructions

  1. Brown the turkey (7 minutes). Heat the olive oil in a large deep skillet over medium-high heat. Add the ground turkey and cook, breaking it into crumbles, until no pink remains and the edges are golden, about 6–7 minutes. Season with the salt and pepper and stir through.
  2. Soften the aromatics (4 minutes). Stir in the onion, sage, and thyme; cook until the onion softens, about 3–4 minutes. Add the garlic and cook 30 seconds more, until fragrant but not browned.
  3. Add the apples (2 minutes). Stir in the diced apples and Dijon mustard. Cook 2 minutes, just until the apples take on a little color — they should still be firm. This is what keeps them tender-crisp in the finished skillet.
  4. Simmer with broth and cream (6 minutes). Pour in the chicken broth and heavy cream, scraping up any browned bits. Bring to a lively simmer, then reduce the heat to medium-low, cover, and cook 6 minutes, until the apples are tender and the sauce has thickened slightly.
  5. Melt in the cheddar (2 minutes). Uncover and stir in 1 cup of the cheddar until it melts into a smooth sauce, about 1 minute. Taste and adjust the salt. Sprinkle the remaining 1/2 cup cheddar over the top, cover, and cook 1–2 minutes more, until melted and bubbly.
  6. Finish and serve (1 minute). Scatter the toasted pecans and fresh sage leaves over the top. Serve hot with crusty bread or over mashed potatoes to catch the sauce.

Doneness cues: Ground turkey must reach 165°F internally (it will, well before the end — the simmer guarantees it). The apples are right when they’re tender but still hold their shape; if they go soft, they were cut too small or simmered too long.

Notes

Food safety: ground turkey must reach 165°F internally. Cheddar split: 1 cup melted in, 1/2 cup on top. Honeycrisp or Gala apples hold their shape; mealy varieties do not. Leftovers 4 days refrigerated / 3 months frozen. Protein ~40g/serving estimated from USDA FoodData Central; not lab-tested.

Nutrition note

Protein is estimated at about 40g per serving, calculated from USDA FoodData Central values for the listed ingredients — this is an estimate, not a lab analysis. Actual values vary by brand and preparation.

Substitutions and tips

  • Apple choice matters. Honeycrisp or Gala hold their shape; avoid mealy varieties like Red Delicious, which fall apart.
  • Ground chicken or lean ground pork swap in 1:1.
  • Make it lighter: swap the heavy cream for half-and-half — the sauce will be a touch thinner.
  • Dairy-free: use your favorite dairy-free cheddar shreds and coconut cream or oat cream; finish with toasted pecans.
  • Extra crunch: the optional pecans are worth toasting — 5 minutes in a dry skillet until fragrant.

Storage and reheating

Refrigerate leftovers within 2 hours in an airtight container for up to 4 days. Reheat in a skillet over medium heat with a splash of broth, or microwave in 60-second bursts, stirring between, until steaming (165°F). The apples soften a bit on reheating but the flavor holds. Freezes well for up to 3 months — thaw overnight in the fridge; add the fresh sage and pecans after reheating.

Frequently asked questions

Can I use a different cheese? Gruyère or white cheddar both melt beautifully here. Pre-shredded bags work, but block cheese grated fresh melts smoother.

Will the apples get mushy? Not if you follow the method — a quick 2-minute sear, then a short simmer. Cut them in 3/4-inch pieces so they keep their bite.

Is this good for meal prep? Yes — portion into containers with bread or mashed potatoes packed alongside. It reheats well for lunches.

Can I make it ahead for a crowd? Brown everything through step 4 up to 2 days ahead and refrigerate; reheat, then do the cheddar melt (step 5) right before serving.
