- Heat the olive oil in a large deep skillet over medium-high heat. Add the ground turkey and cook, breaking it into crumbles, until no pink remains and the edges are golden, about 6–7 minutes. Season with the salt and pepper and stir through.
- Stir in the onion, sage, and thyme; cook until the onion softens, about 3–4 minutes. Add the garlic and cook 30 seconds more, until fragrant but not browned.
- Stir in the diced apples and Dijon mustard. Cook 2 minutes, just until the apples take on a little color — they should still be firm. This is what keeps them tender-crisp in the finished skillet.
- Pour in the chicken broth and heavy cream, scraping up any browned bits. Bring to a lively simmer, then reduce the heat to medium-low, cover, and cook 6 minutes, until the apples are tender and the sauce has thickened slightly.
- Uncover and stir in 1 cup of the cheddar until it melts into a smooth sauce, about 1 minute. Taste and adjust the salt. Sprinkle the remaining 1/2 cup cheddar over the top, cover, and cook 1–2 minutes more, until melted and bubbly.
- Scatter the toasted pecans and fresh sage leaves over the top. Serve hot with crusty bread or over mashed potatoes to catch the sauce.
